Our honey vinegar is fermented for up to 16 months. We do not purchase ready-made vinegar and add to it. We create our own vinegar through a fermentation process over many months. We use local Hunter Valley honey – although the supplier can vary from batch to batch.

Honey vinegar is an excellent addition to vinaigrettes or can be poured directly over salads to accentuate the sweetness of the tomatoes and other salad ingredients. It can also be used in the same way as any other vinegar (for example, in cooking or as a digestive aid when taken in the morning with warm water).

Coming soon is our red wine and blueberry vinegar. We have partnered with Macquariedale Organic Wines to ensure only the best quality red wine for creating our vinegar.
